A New Food Culture from Osaka
BEROMARU began with a desire to share something new from Osaka’s food culture. We want people to discover freshness within familiar dishes, and to leave with a taste that stays in memory and invites them back again. That continuing impression is at the heart of what we do.
Take our Beef Tongue Shumai, for example. By pairing the familiar form of shumai with the rich character of beef tongue, then finishing it with BEROMARU’s signature steaming technique, we create something both surprising and approachable. Fine ingredients, gentle cooking, memorable texture, and deep umami—this is the kind of new deliciousness we hope to share from Osaka.
Where BEROMARU Begins
BEROMARU is built on the standards and philosophy of quality developed at Shingen, a yakiniku restaurant in Sakuragawa, Osaka. Freshness, careful selection, and the commitment to serving food our guests can enjoy with confidence—these values continue to shape everything we do at BEROMARU.
At the same time, BEROMARU was created as something different: a restaurant centered on steamed cuisine. While our foundation comes from a strong respect for quality ingredients, our challenge has been to express that quality in a new way through steaming. That is the spirit BEROMARU was founded on.
Why We Choose Steaming
We choose steaming because we believe it is the best way to let ingredients speak for themselves. Rather than grilling or frying, steaming applies heat gently, locking in natural flavor while creating a tender texture and a clean, elegant finish.
